Today was all about Thanksgiving leftovers in our house. We’ve been eating the usual Turkey sandwiches, but it was time to get creative so we did Sweet Potato Pancakes for breakfast using up the last of our Sweet Potato Casserole, and made White Turkey Chili for dinner using up the last of our Turkey.
Like most Sunday mornings, I woke up craving pancakes. Really Tupelo Honey’s Sweet Potato Pancakes, which is similar to this recipe, but I’m always turned off by the fact that I have to roast a sweet potato on a Sunday morning. However today was different!! I JUMPED out of bed because I remembered we had leftover sweet potato casserole with all the yummy seasonings like cinnamon and nutmeg already in it and knew it would be perfect to use for Sweet Potato pancakes! BAM!
Leftover Sweet Potato Casserole Sweet Potato Pancakes:
Now you may need to alter this recipe depending on how sweet your leftover sweet potatoes from Thanksgiving were. Ours already had nutmeg and cinnamon in it but if yours didn’t go and add them to your pancake batter!
1 Cup leftover Sweet Potato Casserole
1 1/2 Cup Milk
1 Tbsp Honey
1 Tbsp melted butter
1 1/2 cup flour
1 Tbsp baking powder
1 tsp salt
3 Tbsp sugar (optional if your casserole is already sweet)
1 tsp Cinnamon (optional again depending on your casserole)
1/2 tsp nutmeg (optional)
Combine Sweet potato casserole, milk, honey, and eggs and melted butter in a bowl and set aside. In separate bowl combine dry ingredients. Stir wet ingredients into dry. Cook on 350 degree skillet. Yum…and it totally scores mom points serving vegetables for breakfast.
Disclosure for the next recipe: The Turkey Chili pictured and in the recipe is not to Hunter’s perfection level (he made me type this 🙂 ). Now with that said, it was delicious and what makes it really good is that it was made using leftover Turkey and whatever else was already in our pantry and that’s the point for you to do too!
Leftover Turkey White Turkey Chili:
Literally this is all to be changed with whatever you have on hand. Have a red pepper but not a green, great. No pepper at all, just skip it. Have kidney beans instead of Northern, no big deal. Navy Beans are great too. Don’t like Mushrooms, leave them out. You really can’t mess it up as long as you have Chili Powder and leftover Turkey!
2 Tbsp Olive Oil
1 Green pepper
1 Pabalono pepper (we didn’t really have this but if you happened to its great!)
3 olive cloves
3 Cups chopped leftover Turkey
1 Can diced green chilies
3 Cans Great Northern Beans
1 Can of Mushrooms
1 Can of Stewed tomatoes
2 Tsp Smoked Paprika
2 Tbps Chili Powder
1 Tbps Cumin
1/4 cup or splash of half and half
Salt and Pepper
Saute onion and green pepper in olive oil for a few minutes. Add garlic and sauté another minute or so. Add turkey, beans, mushrooms, stewed tomatoes and all the seasonings listed above. Add a splash of half and half if you have it. Mix together and left cook for 30 minutes or so until hot. It was the perfect easy Sunday night meal.
